Boiled crawfish

So I boiled crawfish tonight and the came put great but the mushrooms and sausage weren't spicy enough. I put after I cut fire off. Any suggestions?

There's your problem, IMO. I'm slightly different than most...I put EVERYTHING (corn, potatoes, sausage, mushrooms) in a boil bag and cook that first. Boil until potatoes are fork tender...usually ~10 minutes... then remove from the pot. After the crawfish are boiled, I usually drop the bag back on top of the crawfish for the soak.
You'll get advocates for your method (putting things in the water only after you cut the fire...especially corn) but I've never been a fan of it simply because it just isn't seasoned enough for my taste.

Put mushrooms in same time you put crawfish in. Same with sausage.
Corn only needs to be put in same time you cut fire off. Otherwise the kernels will burst open if boiled for any period of time.

Geaux, I do it the same but leave all veggies etc in while I put the crawfish in, been doing it that way for 30 years and never had an issue with anything. People always tell me the potatoes will fall apart being in there that long but they always come out perfect

I always just add mushrooms at the soak and the come out very spicy. I put the sausage in at the very beginning with the potatoes. They hold up fine.

Yep....and that the kernels will bust if they are boiled for any length of time. I just because I've never had that happen and I've been boiling for about as long as you.

Potatoes go in first. When the water is making steam, and starting to show signs of foaming.
Crawfish, sausage, garlic, onions go in at the same time - when the water is a rapid boil.
When I cut the fire, put in corn and hot dogs.
No shrooms cause that's nasty.

I put mine in as soon as I cut off the fire and I never have a problem with not being spicy enough. What is your water seasoned with??

I think about it this way: there's two purposes of the add-ins, for flavor and to eat. Some are for both.
I put the flavor things (onions, celery, some garlic) in early for plenty of time to cook out.
The eating things I add based on cook time, for example, with potatoes going in earlier, with most other things going in with the bugs. Exception, I add frozen corn at the end because they get overlooked easily.

Get LFF liquid boil and put a bottle in when you soak. That shite will light up your pot....and your a-hole.

That's usually when I throw in my shrooms and they're good. Maybe soak them a little longer next time??
