Have plate setter in, vents almost completely choked off, bottom vent is facing away from wind. Cannot get temp below 300. Verified with a digital thermometer. What am I doing wrong?

Too much charcoal lit? Did you try minion method? Easier to bring up to temp than overshoot and bring back down.

I didn't think I had too much charcoal. It's not "full". What's the minion method?

How high did you let it get before you closed vents?

Try closing the top off completely

You might have a bad gasket. You shouldn't have let it get that hot in the first place.

Once the egg is hot its damn hard to cool down. Usually the temp will drop when you throw a big hunk of meat on it. Also you could try throwing a big cup of wood chips or a few hunks of soaked wood on your coals to knock it down it a bit.

How did you light it and how hot did you let it get before choking down vents?
