Currently got the egg going and I can't get it to hold a temp above 225. All the ash is cleaned out and the vents are fully open. I don't see any smoke coming out the gasket so there's no leak as far as I know. Thoughts or suggestions? There is smoke coming out of the bottom vent though....

I don't have one, but with the vents fully open you can't get a temp to hold above 225? That seems impossible.

What are you using to read the current temp? Is the thermostat on the egg broken/ possibly not accurate?

Get a coat hanger and post holes through the grate in the bottom. Could be blocked even if ash is all clear at the bottom

How did you light the lump?

I took all of the old charcoal/wood out, cleaned the grate, scooped all the ash out, added back only the big peices of coal/wood, added some new charcoal, lit the fire for 15 minutes, closed the lid....225 steady. Can't get any higher.

What does the fire look like? Is it burning normally? If not, it sounds like your coal must be wet. Is that possible? It sounds like it's getting more than enough oxygen.

The charcoal worked fine last time. I stored the bag in my garage so it wasn't stored outside. The fire was roaring before I closed the lid. That being said this has to be a charcoal issue?

Did you clean out the holes in the firebox?

It's one of two things.. bad lump or no airflow.

The only time that I ever had issues was when I just dumped the rest of the bag of charcoal in and a lot of smaller pieces and dust filled all of the crevices that allowed oxygen to flow through. I would suggest tamping out the fire that you have a rebuilding with some new coal.

One last thing, when you cleaned it out, did you align the hole in the base with the vent? Only other thing that I can think of that could affect air flow.

If all the air holes are clear, even the ones on the firebox above the grate, then you must have a bad lump.

You have a blockage somewhere. Also when you light it close the lid with the top and bottom vents open after you get the coals started. That way the entire egg slowly comes up to temp and it makes it easier to control.

If everything is set up properly, then something is wrong with the charcoal? It's hard to imagine defective charcoal, but I'm sure it's possible.

Do you have the fire box aligned properly with the bottom vent?

If so, get a box fan and point it at the bottom vent on high... that's what I do when I need to bump the heat a bit.

The fire ring has a cutout...this cutout should align with the bottom vent. If it is turned to the side, you aren't getting good airflow. The grate atop the fire ring also has holes with an outward facing bevel--you could have put the grate in upside down, which would result in ash being retained atop it, rather than spilling downward.

Also, some very dense lump just takes longer to light. I like to light it in 2-3 places using firestarter material to get it going.

Make sure the grate is placed in there convex.

Unless the OP is doing something egregious, sounds like the thermometer is stuck/broke.

Thanks everyone. Everything is correct with the pit...Firebox is properly aligned, vents are clear, etc etc. All I can think of is the charcoal must have absorbed some moisture. I've got it up to 250 and I'm halfway through a smoke. Gonna try a new bag of charcoal next week and try to confirm my suspicion.
