Dr said I need to eat more fish. Never bought/tried salmon before. Do I just go to Walmart and buy the frozen, or should a local meat market carry salmon?

I grilled some sockeye salmon from Fresh Market the other night on cedar planks and it was outstanding. I like sockeye and king salmon the best. I steer clear of the farm raised kind and opt out for the wild caught varieties.

There are 2 types of salmon, Atlantic that will always be farm raised and Pacific Northwest that will almost always be wild caught. The most common Pacific Norhwest varieties are Coho and Sockeye. You may also see King and Copper River but these 2 will be very expensive and not worth the $$ IMO. Most salmon you see at stores will be previously frozen or frozen. Either is fine but I seem to always buy the thawed salmon in the display case.....usually at Whole Foods or Central Market.....they have the freshest fish in my area (Dallas). I never by atlantic as it doesn't taste as good to me as PNW. I remove the bones w/ scissor tweezers (although Whole foods does this for me) and usually marinate for a minimum of 4 hours in a lime juice/soy/ olive oil/ salt mixture....I will sometimes add a little mustard or whiskey or honey. I always grill over charcoal AT A LOW TEMP OF 275 OR SO. I almost always use a cedar plank....I buy cedar fencing board at Home Depot and cut it into 12" length. DO NOT OVER COOK. Google how to cook salmon....under cooked>>>>over cooked. I grill enough to eat on for 3 days. The second and third day I usually make a salmon burger or salmon tacos. Smoke salmon pasta is really good too but it is heavy on the cream so not very healthy.

Best advice. Salmon is delicious but it can become quite dry if you over cook it.

I don't buy any meat at WalMart. it's just a thing I have.

I get salmon from trusted grocers, although I know anything we get in LA is previously frozen.

I just cook it on a medium to medium high grill until the fat starts oozing out. Perfect every time.

Zappa please stop doing this. The fence board is usually treated with chemicals. You need cedar intended for cooking.

Cedar is not treated.....it doesnt need to be treated as it is naturally rot resistant. I have confirmed this multiple ways and any treated wood has to be labeled as such.

I get my salmon from Costco. I'm sure it is farm raised, but it is also delicious.

Sure wild is better but usually a lot more expensive. Farm raised is fine. The important thing is to buy from a vendor that sells a lot of salmon. For example, in NOLA I buy from Restaurant Depot because it is usually between $4.99 and $6.99 a pound and is extremely fresh because they sell a ton of it. In a pinch I will buy from Robert's as well.

As far as cooking it OP, simple on a grill. Have a spatula, put over direct heat, meat side down. Once meat stops grabbing the grates, 4-6 minutes, flip where it's skin side down. Cook 1-2 more minutes. Season however you like

I would call local stores like Rouses or Albertson if there is one near you and see what day the truck delivers the fresh fish and I would purchase my fish on that day and not later in the week because that fish usually sits on ice until sold.
