Traditional, fried, not breaded buffalo - The Bulldog Mid City
Smoked - Blue Oak (Rooster) or McClure's
Breaded - Bayou Hot Wings (Bayou Hot Boy)

I wasn't a fan of Bayou Hot Wings. They were too small and over priced.

Fleury of Wings and the place that was where NOLA smoke house is (was) were really good, but neither got enough people to go.
I just make my own. I like to do a breaded fry (sometimes naked, but usually breaded)
I make my sauce with butter, crystal and Sirachi.
After a deep fry, I toss the wings in a bowl with the sauce and then finish in the oven so the sauce bakes into the crust. Serve with home made ranch (milk+lemon juice, sour cream, dry seasonings) (can substitute buttermilk for the milk and lemon)
If doing quick wings I do naked, and then sauce and serve.

I only eat unbreaded/naked wings, so I haven't tried Bayou Hot Wings. (I've heard they don't offer naked)

Who has tried the wing truck?

I only see the wing truck off Broad and Washington at that new daq shop. Not willing to catch hot lead for those wings.

I tried it and wasn't impressed. I honestly don't remember what sauces I got, it was forgettable. I may give them another shot if they are ever at Courtyard while I'm there.
ETA: it goes to Courtyard on certain days, and used to go down Tulane by the medical center. I'm not sure if it still goes there or not.

Blue Oak, followed by Bourre'.
Bourre' makes a damn fine wing, but if you don't spend $50/head you'll leave hungry.

Does their buffalo sauce still have a citrus flavor to it?

They were good, but damn fine is pushing it. $50 comment is spot on.
Yes, the buffalo had a citrusy taste. Wasn't nearly hot enough, but I may try again and ask them to kick up the heat.

That citrus flavor threw me off, I wasn't expecting it and I didn't really like it.

while i agree blue oak is delicious, if the guy is looking for the traditional buffalo wing fried crisp and tossed in franks and butter - that aint it.
