Bayona - Not top of mind, but always fantastic

Edit due to original post being written on my phone and roughly 3 old fashioned's and 2 glasses of wine in.
When discussing where to have a nice meal, Bayona rarely comes to mind. Mostly because I have been there 5 or 6 times, and I have a hard time not trying something new. It's been over a year since I have been, but god damn it was good.
Apps:
Sweetbreads with sherry mustard butter, a staple, and still my favorite in the city. Crispy, perfect on the inside, and the flavors of the sherry mustard just work.
Garlic soup, was my least favorite dish of the night, but still solid. Not as flavorful as I remember.
Main Course:
Smoked pork brisket, fantastic. Perfectly cooked, great flavors and texture. Yams and black eyed peas were a great pair.
Wife had the lemon butter and caper sweetbreads, so I helped myself to a second helping.
Others had the lamb and artichoke stuffed rabbit roulade with yogurt fried boneless rabbit leg (winner of the night.)
I need to go back more often.
Also, as some have mentioned, I think the reason for the lack of press, publicity, or hype is due to its greatest qualities.
Rarely does Bayona exceed expectation, only because they are so high, but it has never fallen short(for me.) For the five or so years I have dinned there, I can't think of one other restaurant that has never left me at least a little disappointed.
It has been around a while, and is not something cool, or new. Yet you never get tired of what she does. She keeps her hits on the menu, but always has a fresh seasonal dishes that change constantly.
I have had better meals, but the more I think about it, from consistency, experience, and quality of food, Bayona is hard to beat.

I have a friend who says that the crispy smoked quail salad with pears and Bourbon molasses dressing is perhaps the best dish in the city.

My wife and I go about three times a year for the last 20 years since I gave her a 30 th birthday party there. It's a great place and it does just kind of not fly on the radar. The best thing is about 90% of the time Susan Spicer is in the kitchen.
She was an original partner in Herbsaint as well when Donald Link left Bayona to open.
I have not been to Mondo and need to try it. Any reviews on it?

Went for lunch a while back. I had the burger and it was pretty tasty. Added Gruyere and Nueske's bacon and I was a happy camper. Wife had the fish tacos and was happy with her choice. We split the pork and shrimp meatballs on the recommendation of the bartender. Nothing mind-bending but good. Service was really good at the bar with a very personable and attentive bartender. Would like to go back for dinner.

Mondo is pretty clutch for the price point. The place is very casual but the food is high quality. I think it's definitely worth trying out at least once.
And to the OP's point, agreed Bayona somehow doesn't get much press or pub but it is a fantastic restaurant. The food is unreal. Those sweetbreads.

She was driving off down the street when we walked up, but the food did not disapoint.
