Baby Corn-Do You Use It?

I see baby corn periodically, mostly in Asian dishes. I can't recall using it, but maybe once or twice and I don't even recall the dishes.
Below is an article on it from Serious Eats. I've never seen it fresh that I can remember. I've never had it fried, though it sounds good to me.
Do any of you use it and how?

I eat them in a salad and if I remember I sometimes will pop some holes in the can and drop them in a seafood boil.

I sometimes put them, and quail eggs in chili for a change up from the usual.

Me too. I'm going to make an effort to try them in a few different ways. I don't think about them. I like the idea of them in crab boil as someone suggested. I wouldn't be above tossing those hot babies in a little butter either.

I'll sometimes have them in salads, but that's about it. I might have to try cooking with them.

Chinese restaurant dishes around here used to have it sometimes, but not so much lately in the ones I visit.
I have bought the canned baby corn and used it in stir fries, but I pretty much stopped because it tasted canned and "tinny" even if rinsed, sauced, etc.
The comments on the article are interesting. It seems folks in some states get it fresh at Wegmans, Trader Joes and similar stores, and folks in Ireland, Scotland and the UK posted to say they have it in stores year around. I've never seem it fresh.
