I had a similar experience at shucks. Went on Sunday around brunch time. It was busy. Food was ok, but extremely overpriced and the wait staff was not prepared for people to come in. No plans to really go back. I prefer oysters at chimes and acme, personally.

I don't like how Chimes & Sammy's (Prairieville) shuck their oysters in advance and store them in a cooler

I've sat at the bar in front of the shucker a few times at Chimes

Parrain's and Chimes have the same owner. I doubt they have seperate operating techniques with oysters.

Can't speak to the oysters at sammy's.

I went to Shucks for lunch 2 weeks ago.

1). There is no lunch menu, so prepare to pay out the arse for lunch

2). I ordered a shrimp po-boy and it was dry as all hell. I didn't care for how the shrimp were breaded. Didn't taste all that great.

The manager did come up and ask us how everything was. I should have been more honest, but I didn't have time to explain and wait for a possible substitute.

My friend got the oysters. He wasn't very impressed.

I probably won't be back.

I sat at the oyster bar @ Chimes East last week and watched them shuck and then put on a bigass cookie sheet then into the vertical fridge.

I wasn't impressed by Shucks, either. Not enough bang for the buck. Both Roux 61 and Duke's are much better.

Those could have been for charbroiled, though I'm not familiar with their menu. I've noticed places do that for their cooked oyster offerings.
