Apple Pie: recipes, tips, etc..

I've got about 3 dozen apples I picked in my yard yesterday. They're red, not green. Was thinking I would try to make an applie pie. I know you're supposed to use granny smith, but I ain't got those.

Anyway...anybody got any good recipes for making apple pie. Also, what about the pie crust and/or pie covering? I'm not opposed to buying something pre-made or pre-rolled. Was also thinking I'd try for the sexy lattice thing on top.

Anyway, thanks for any and all help.

Probly won't be making it till this weekend, but if it turns out decent I'll post a pic.

come on man, make your own crust. here's what it takes:

flour
butter
salt
sugar
water

Google tarte tartin, it is a French delight to make and only requires a single crust.

Don't cut up apples small or you will have applesauce pie.

Tracy, are you saying that because they're red apples? Because what I've red so far said to cut the apples thin so they will cook all the way through. (Though they also recommend granny smith.)

Also, I realize pie crust ingredients are simple...but Rohan you didn't exactly offer anything that helped to make pie crust. You know, like instructions.

For the record, I tried to make homemade pizza dough several months ago and it just didn't work.

personally, I like to peel and core my apples then simmer them on the stove in a little water, brown and white sugar, vanilla and a touch of butter til they are kind of soft, then add them to a crust and bake... for me, it beats overcooking the crust to make sure the apples are cooked all the way...

oh, and if you look up a basic cake recipe, minus the wet ingredients, and add to a stick or so of butter, it makes for a really great Dutch Apple Topping...

google Brown Betty and Apple Crisp recipes for a lot of "from scratch" ideas...

I was considering something like this also.

Anyone have any experience with the apples turning brown? And or, ways to keep them from turning brown without changing the taste of them. Saltwater?

I'll come make the damn pie for you just to hear you talk.

Red will work if thats what you have growing in the yard. Peel, core and slice. Simmer in butter and brown sugar.

Buy a box of 9" pie crusts in a box and use according to directions. You can thaw one unroll and make the "sexy lattice". When you simmer the apples stir in a tablespoon of cornstarch with a couple tablespoons of water into them. (a slurry) Then bake pie as the box says, about 350-400 for 30-45 minutes. Let cool for an hour before cutting to allow it to set.

Buy some Bluebell.

Cut the apples and use right away to keep from getting brown. Whatever you do make sure you mix a couple tablespoons of flour in with your sugar so the final product isn't runny. I use the premade pie crusts. It's easy and I'm not good at making them from scratch either. Apple pie is pretty easy. Keep trying if your first one doesn't turn out good.
ETA. You can also sprinkle your apples with lemon juice to prevent browning
