Anyone here make a paella?

Rice, meat, and seafood.

Sounds like what I like in a jambalaya. None of the recipes I have seen have really hit home with me. Anyone have a favorite they would like to share?

When George's mom made paella, that's when I first learned about it. I was prolly 13.

When I got older and researched the type of vessel you need, and the ingredients, I wanted to make it even more.

You up for the challenge?

Sure. I need a pan also. I hear etiquette is for everyone to eat directly out of the pan. I need to get some saffron also. Not a standard pantry item in my kitchen.

That's what I meant by vessel.

And safron ain't cheap. Prepare to drop a nut on that, and the seafood.

Eating from the pan deal is probably flexible.

I always thought it would be a cool dish to make for friends out of the blue, or family.
We've got lots of good seafood here. Wouldn't be hard to do a Cajun version.

Do yourself a favor and go to Barcelona Tapas. It's uptown New Orleans right off St Charles and Leake Ave(river road)

Laurentino has some awesome paella

Make it all the time. Google Jose Andres paella. Key is really the rice, the soffrito, the pan, and the stock. Do those 4 things right and the rest is easy peasy. I like to make one on the spring with crawfish, favas, and asparagus.

Made it a few times, Just use a large cast iron skillet with a lid. Love the saffron flavor, but hated spending more of saffron than on the seafood.

Lid it with newspaper, once you´ve pulled it off the fire. Let it sit ten minutes before eating.

I make it on the grill. Don't like chorizo si I substitute andouille for the cajun twist. Chicken Drummetes and/or thighs (boneless or full). Get the correct rice. Pay attention to the soffrito and saccarat for a great paella.

Can of peas is good for color to offset the yellow from the saffron. So are chooped or strips of red pepper.

Spanish folks on the food subreddit flip on outsiders doing their version of paella the same way we flip on outside versions of jambalaya or gumbo.

So I don't think I'll ever try to make it.

There's a guy here that makes paella pans out of old tractor discs. They are so bad arse. Wiley Woks I think they are called.... He's supposed to be making more soon
