Anyone got a good smothered pork chops recipe?

Isn't hard.... brown the shite out of some pork chops. Take them out, add veges and brown for a bit, add garlic, cook for a few more minutes then deglaze with stock or wine. Cook down your veges and add stock as necessary to make your gravy. Once you like it... throw the chops back in and cook until desired tenderness. Adding stock or water as it cooks down. Kind of depends on how much gravy you want.
Oh and season at every step.... your chops, the veges and the gravy. Throw green onions on top when done.

My only variation to that would be deglazing with apple juice or cider. Saw Paul Prudhomme do it on one of his shows and it adds a nice depth of flavor.
