I am going to try this tomorrow for the hell of it.
Two different recipes and they are completely different in relation with bacon thickness and cook time
Any pointers, much appreciated!

Looks nasty to me. That's kindof like slapping God in the face. Bacon is perfect the way it is. This is just my opinion. Obviously I will be in the minority. If it ain't broke, don't try and fix it. I get heartburn just looking at that pic in the recipe.

I haven't read a bad review yet if that accounts for anything

candied bacon sounds good. I don't remember cayenne involved though

Looks like a spicy pralined bacon to me. I'd certainly eat it.

I know it as Pig Candy. Google it by that name and you'll get plenty of hits.
There's a lot's of variations but most involve brown sugar, at minimum, and often the addition of various peppers/ spices. It can be cooked in the oven, on a grill or smoker.

Colored Bacon
Not racist.
And I make bacon peanut brittle every now and then which is good stuff. I need to try bacon pralines but I'm not a praline maker.
