Anyone eat parsnips?

How do you prepare them? Not sure if I've ever knowingly eaten them, but am interested.

Anyway you'd do a carrot or potato.

Slice into 1/4" chunks. Cook down some bacon. Remove bacon from pan saute the chunks in the bacon grease until they soften, about 8-10 minutes, add some slivered onions in the then crumble the bacon on top when serving.
