Anybody have a knockoff recipe of Popeye's green beans?
I just tried these for the first time in my 20+ years of eating there and they're pretty damn tasty.

I'd imagine you could find just about any copycat recipe you want on Pinterest.

I fry off 2 pieces of bacon and set aside. Drain green beans and pour in bacon grease. Add a little finely chopped onions. Pan fry for a few minutes. Dust with salt and pepper and add some crushed garlic. Cook for a few more minutes then add crumbled up bacon and enough chicken stock to almost cover the beans. Lower heat to simmer and let them go until almost all of the stock has cooked out. Done.

I think they are canned green beans in a light roux. I've only had them once, though.

I always get the red beans without rice. I prefer Popeye's red beans that way.

For the sides, they don't tend to fill up the container to the top when there is no rice. It varies a bit with who is fixing it and at different stores.

I've never ordered a family size. You could also ask for the rice in a separate container if you're going to be reheating and eating later.

REEN BEANS
Popeyes Copycat Recipe

1/2 lb. sliced bacon, cut in 1/2 inch strips
1/4 lb. smoked ham, cut in 1/4 inch cubes
2 medium onions, rough chop approximately 3/4 inch cut
1 small bell pepper, rough chop
1/2 stalk celery, medium fine minced
2 cloves garlic, minced
1 stick of butter
1/4 cup flour
3 teaspoons seasoning salt Cajun/Creole (such as Chef Paul Prudhommes, Zatarains or Tony Chachere's available at grocery stores)
1 quart chicken stock
6 cans cut green beans, drained

Saute bacon and ham in butter until bacon is just beginning to reduce size. Add all vegetables cut in 1/4 inch dice to the bacon mixture saute for 15 minutes on medium heat. Add seasoning salt and minced garlic, stir well and cook for another 3 minutes. Add the flour and cook for 2 to 3 minutes, stirring constantly, add chicken stock and bring up to a simmer and cook for 5 to 8 minutes, do not boil, just a simmer. Drain the green beans and add to the mixture cook for 5 minutes.
