anybody have a good recipe for red beans in the crockpot

I want something that's easy and I figured this would be the way to go...do I soak the beans or not...thanks for any help

Old redneck at the deer camp up north does red beans in a crock pot. Not sure if he soaks or not though. But his recipe is basically two boxes of Zatarrain's Red Bean Mix, a ham hock or two and two or three smoked turkey necks. I think he may cut up some onions in there too. They were surprisingly good. Very good in fact.

You'll find various threads by googling " crockpot red beans tigerdroppings" Some soak. Some don't.

1lb red beans
1 container Guidrys chopped veggies
1 sm cap of liquid crab boil
2 bay leaves
1lb sausage sliced
Salt and pepper
1/2 teaspoon of hot sauce. I use Crystal
2 quarts vegetable stock
Combine all ingredients in crockpot. Cook on high for 5 hrs. At the 5 hr mark remove the cover and smash a bunch of the beans and stir them back into the pot. Cook uncovered for 1 hr Works every time

The night before I bring a gallon of water to boil and dump in 1/2 cup of salt. While the water is still boiling I drop in 2lbs of dry red beans and shut the stove off. Let that soak over night. The next morning I strain my beans add them to the crockpot with 1 1/2 cups of medium onion chopped, 1 Block of Crisco Like This to make them cream and 1lb protein of some sort..... Ham hock, pickled pork, salt meat, tasso, andouille, smoked sausage, then cover them with water about 3/4" over the beans. Cover the crockpot and let them cook all day on high. When I get home they are normally done, I just need to season them to taste.

1lb beans
1lb sausage
1 onion diced
1 bell pepper diced
1 quart chicken stock
1-2 smoked ham hock
2 bay leaves
Seasoning to taste

Soak beans overnight, brown sausage and then onion and bell pepper. Put everything in crock pot and cook on low all day. I like to finish mine in a pot on the stove to evaporate some liquid and thicken them up.

this is almost exactly what I do. I add a garlic to that, and I don't brown anything. I soak beans overnight, throw everything in pot before work, low all day. when I get home I add one large can of blue-runners to the pot.

Basic

-1 lb of beans
-1 lb of sausage
-Water- I'm about 72 to 80oz of water(2 1/2 32oz cups)
-seasoning(salt, pepper, garlic powder, mrs dash, Bay leaf, chili powder) plus some finely chopped onion

I never had to soak since its sitting in crock pot for minimum of 6hrs.

You don't have to do much more than that to be a great meal. My kids eat it up in any case.

You can build it from there if you want to add a stock or whatever else is on your spice shelf.

I only use 3-4 cups of liquid. I don't really measure it, just put in enough to cover the beans.

3 tablespoon Cajun seasoning
7cup water

6 hours high

It's simple but it tastes great to me.

Cooking at 6hrs you are correct... normally it's in the crock pot 8 to 9hrs.

I also don't really measure... I just use a 32oz cup and stop when it looks right which is usually about 2 1/2 times.

I'm definitely a little more than 4 cups though.
