No, I was not a peasant chef at the multi million dollar lodge. In fact, it was my lodge and I had peasant chefs cooking for me.

I am officially an OT Baller. Thank you.

I thought it was evident the discussion was about the presentation always associated with prime rib.

I thought the discussion was about the Prime Rib (Ribeye, Rib Roast, Rib Roll etc). A juicy, flavorful cut of red meat when done properly, in my dissenting opinion. The discussion quickly got turned into Grandma Mildred's version of prime rib they served at Tina Sue's wedding and the Prime Rib the Ameristar comps you when you drop a car note in their slot machines. That version is not worth a shite, and is indeed tired and worn out. I would not judge a ribeye roast based off that no more than I would a ribeye steak based on the Waffle House version.

Well, maybe not overrated, but I just think of weddings/receptions every time I have it. I'd never get it in a restaurant.

Most of the time I avoid steaks at restaurants anymore. Anything that I know I can do at home better and cheap (sea scallops, crab legs, steak, roasts) I tend to avoid.

There's nothing wrong with a well cooked prime rib at home IMO. Most of the restaurants/casinos/weddings don't do a very good job.

A couple months ago we did a prime rib in the smoker at my brothers house. Let it rest and cut it into steaks. Then we put some blackening seasoning on each steak and seared them on the flat top. Was fantastic

I agree with you though. Most of the times I've had prime rib it has been pretty meh

IRC the only thing that was critiziced about his gumbo was the color of the roux because he could have darkened it up a little bit.

Are the vegetables in your gumbo "crunchy", Iron Camp Chef ?

My veggies are always crunchy. I believe R2R actually overcooked his because he said:

Although they weren't crunchy in the slightest.

About his veggies. I probably wouldn't have enjoyed his gumbo. I learned how to make mine from the GC. GOAT gumbo IMO.

Prime rib is underrated. It is the most flavorful piece of beef. Why do you think it is served at celebrations? It ain't because it is cheap. It is to honor the guests.

I didn't know it was highly rated.

Either way, I've probably only had it a handful of times in my life and all were at group functions.. maybe also at L'Auberge buffet if that's the thing they're cutting in front of you.

Things like that don't really tempt me. I am not a meat and three type.

The country club where I play golf makes a great prime rib....it is very, very tasty and perfectly cooked to a medium rare to barely medium.

Which is awesome.

I love rare roast beef. I only eat about one prime rib per year, but I look forward to it each time.
