Like a handheld one?

Never heard of one that works.

Yep. I've made 100s of rouxs like right now. Ax I type this. Am I doing something wrong? Takes me like 1.5 to 2 hrs to get it to where I want it.

They don't work I have tried.

This is a safer lazy route I think, outside of buying a pre-made: nuke it

Just stick it in the oven. It will take a little while but you can use that time to chop up your trinity, drink a few beers, watch a game on tv, hang out with family, etc.

It doesn't get any easier than that.

Buy a wider-bottomed pot.
More surface area = faster heat transfer

ETA: May have just been the camera angle but your pot looks more like a tube.
