you could just use regular ziplock bags

I don't see why not... I wouldn't necessarily want them to be right on top of each other, but two steaks side by side in a gallon ziploc, or several chicken breasts in a single bag should all cook fine.

I usually do steaks separately because my wife prefers hers a little bit closer to medium than I do.

Yes. Just don't overcrowd it and add some type of oil. And kinda bounce them around on occasion just make sure they do not form together.
