Macaroni salad is really good. You could also serve the pork on tortillas as carnitas. Hot dogs in the boil are also usually big hits.

A cold ,fried fish sandwich the next day for breakfast or lunch is always a good thing.

For my crawfish boils, we always serve Jambalaya plus Corn and Shrimp Bisque. And a salad.

Watermelon, tomato and onion salad

Gazpacho garnished with shrimp...or not- you can do a standard gazpacho, white or even a watermelon

Fried fish is usually the other option we offer at parties. It's work, but I'll eat it hot, room temp or cold as long as its crispy.

I usually serve either jalapeno cheese bread or garlic cheddar biscuits. It's filling, easy to eat with crawfish soaked hands, and helps absorb the alcohol for those who consume a little (or a lot) too much beer.

I don't care if they do or not.. I'm not going through the work/mess that is frying fish I don't have an electric fryer that I can use outdoors, so it would have to be done in the kitchen. I just woke up too.. so yeah.

I'm thinking the pulled pork and a cold dish like pasta salad or coleslaw. The crawfish will likely be plenty during the day, but we have several guests from out of town staying the night and everyone will be drinking (so no one will want to drive). It will be good to have something hot to eat when it gets late and we are long past crawfish.
