I had a narrow window for Christmas cooking this year. I inadvertently used rancid duck fat for my gumbo. I lost a very fine stock in the process. One call to Jambo (Opie) and I had two gallons of very fine gumbo to serve today. I never would have met him if not for this food board. Merry Christmas to all of you fine people. Pray my kids sleep soon.

I had a similar experience making a stew today. Was about to add my crawfish, I tasted the stew first and it tasted like shite. I tossed it and made a hot crawfish dip with the Crawfish.
