Mandarin Chicken
Did you know that the Mandarin Chicken served in Louisiana restaurants is completely different from what is served in the rest of the US.? Here it is a soy-based gravy over fried chicken. Elsewhere it is an orange and chicken dish. Fitzmorris has the local version recipe on his website. (He derides it, of course.)

Moo Goo Gai Pan
Almond Chicken
Hot and Sour Soup
General Tso's Chicken
Pot Stickers
Egg Rolls (I can't decide what to put on them though, Plum Sauce, Soy Sauce or hot mustard*)

I don't like anything with 5-spice powder.

My wife loves the NOLA-style Mandarin Chicken.

ETA: *You can make hot mustard by simply mixing Coleman's Mustard Powder with water. That's it.

Yup, one of those things I learned when I moved out of state. I love the LA version.

Trey Yuen has a dish my wife likes called shrimp in a cloud.
It's all she gets. It's a nice size portion of jumbo shrimp and jumbo lump in some kind of egg white base sauce, I think. I don't really wanna know.

She eats it, then there's enough leftover for me to make a large omelete with crab and shrooms the next day.

You ever notice that the mustard sauce in the jar on the table is much different than those little packets?

I prefer the stuff on the table. The packets aren't hot enough.

Anyone seen the doc Gen. Saos Chicken? Pretty interesting, they have a group that lets immigrants know what kind of Chinese food the locals like.

Yes, I watched the documentary and was surprised that is was completely made up and only a handful of people knew what it was and who came up with the dish outside of the U.S.

I guess they were running out of places for them to open restaurants and told them Louisiana has plenty of room for Chinese restaurants, because they are everywhere now. I can remember when there was only 5 or 6 I knew about between BR, and Denham and that was in 2000.
