A Dinner I had Saturday Night with food porn

Had a fantastic meal Saturday night. We started with Bacon Wrapped pickled watermelon rind with a slice of watermelon topped with a balsamic reduction.
Next we had Country fried bacon on top of a cheddar cheese waffle drizzled with honey hot sauce and bourbon maple syrup

Next was a Cold Avocado Soup topped with sour cream, bacon, and cilantro

Next was my favorite of the night, A 12hr smoked pulled pork daube glace with and apple, red onion slaw

Then came a little palate cleansing with apple brandy

Next was the Grilled Pork Tenderloin over parsnip and potato mash

Then came the cheese board with pecans tosted in bacon fat, butter, and rosemary


Finally, dessert was a bourbon creme brulee topped with bacoon dust and caramelized sugar

It was quite an evening.

This was at a friend's new house in Lakeview. He has a fantastic kitchen and asked me to cook a dinner to christen his new place.

IWEI, but I don't get the love for bacon. I mean it's good, but the only time i prefer it is fried, by itself, with my eggs and grits for breakfast. Every other use of bacon I would just prefer the bacon be left out.

It sure is. It's generally made with beef, but given the theme of the dinner I made it with smoked pork butt

Yeah deep fried bacon is very good. There were no complaints.

Yep. Not a different wine with each course, but we spread several types over the entire meal.
