Ellington is risky due to the injury and the fact they have two other backs that have been running well. But if he plays a decent amount I think he still has the potential to get a touchdown.
With the current QB situation in Dallas, Williams will be very hit or miss.
Do you have any other safer options?

New England has been bad against the pass and the fact that Williams is Dallas' No. 1 receiver, he may be your better option. Also, Dunbar is now out for Dallas so they will have less runners. I would give Ellington at least 1 week to see how they split the carries between the 3 backs.
