Another Dish to Serve at a Crawfish Boil?

I know I've seen this topic on here, but I just searched and only found threads for sides with crawfish etouffee or fettucine.. so I apologize.

Having a crawfish boil tomorrow, and I wanted to make something else too. I already will be doing salad just because it's nice to have something cold and less filling, but I wanted to do a "food-food" too. A lot of guests are "maybe" on the RSVP front, so we might have way too much.. or way too little crawfish. Plus, I know some people like to have a regular food item along with crawfish.

I DO NOT want to make jambalaya, dirty rice, etouffee, etc. Seems like the obvious choice, and Jones and I both decided we don't want something "cajun" and spicy to go along with a crawfish boil. I want something that people can make a little bowl/plate of before or after eating the crawfish that will hold them up more than the crawfish might.

Any ideas?

Pulled pork is not a bad idea. I can have a self serve crock pot and get the small Hawaiian rolls so they're like sliders.

Meh. I want to do something I can have cooked before people get there and they can eat whenever they'd like. Fried fish is only good right out of the fryer IMO

It could even result in being called things like "dense" or "you must be a miserable frick IRL" on a bad day on the FDB.

I think read beans and rice with salad goes well. I know you said you didn't want to make something like that though.

Some sort of casserole with salad?

I wouldn't provide another entree...you're already doing crawfish. Why not add another substantial side or two? A non sweet non creamy coleslaw provides counterpoint to the heat and richness of crawfishw....put some chopped or shredded green apple in it. Bake a big batch of jalapeño or green chile corn muffins and make some pimento cheese or other spicy cheese spread to go with the corn muffins. People can graze on the slaw, muffins, and cheese spread if the crawfish run thin. Dunno what you're doing for dessert, but citrusy things go well w crawfish. Lemon icebox pie, key lime, lemon bars, ice cream sandwiches made with oatmeal cookies filled with lemon ice cream, roll the edges in chopped nuts.

Either the pulled pork, or grilled sliders seem to be things to consider.
