this phenomenon only seems to happen at baseball.
To answer the question of why, it's worthwhile to understand that baseball is simply a higher class sport. Like golf or tennis, it appeals to those of higher socioeconomic status, just as Nascar and hockey appeal more to lower socioeconomic classes. As such, baseball is seen as more of a gentleman's sport, and its fans view themselves the same way, so they are generally more determined to conduct themselves in a gentlemanly manner.

I'm not going to argue that the victory lap was right or wrong --- just trying to explain.

I would add to my previous comment that I don't think this really has much to do with the sport itself.

In the U.S., soccer is viewed as a sport attractive to higher socioeconomic classes, because it allows a fan to present himself as cosmopolitan and knowledgeable about the world. In the rest of the world, however, soccer is a lower-class sport with hooligans and loud noisemakers, etc. Can you imagine wild soccer fans starting mob fights in the U.S.?

In England, cricket is the sport for the higher socioeconomic classes. Or perhaps even polo.

Only at higher levels. Little league parents up through high school are some of the worst people ever when it comes to their mouth at games.

Let's applaud their starting pitcher when he leaves the game!!! That's the classy thing to do and we are known for it!!

Baseball fans seem to always try and for lack of a better expression, out class each other. It sort of gets me sick.

Since the term "old farts" has been tossed around here quite a bit, I'll take the same approach to those who I disagree with. All you college kiddies are the same ones who rant & rave bout how great TS is, and then leave at half time of a close SEC game to go back to your parties in the parking lot. More often than not lately. Society is what it is today & I accept that. But I'll never apologize for showing appreciation for a good effort at the appropriate time when deserved. I still use "Yes, Sir/Ma'am" when appropriate. I still open doors for females. I still stand up when a female approaches my table. And I could care less what anyone thinks my motives are. I just wish I could read minds as well as you college kiddies can, it would make life so much easier.
