I made Vita Greco's Red Gravy with meatballs over the weekend. Pics aren't pretty, but here they are for those who like pics. It's a good recipe. I made more meatballs than called for because there's a lot of sauce in this one. I put more ground meat than called for. Used a lot of pork necks, but no lamb shank. Makes more than it says in the recipe. Here's a link to the recipe. LINK There's a similar recipe in the latest issue of Cuisine at Home. It calls for spareribs rather than pork necks. I've used those as well. Meatball mixture. Meatballs Meatballs in the pot browning. The sauce. The browned meats. This isn't pretty, but it smelled good and tasted better. Sauce with meat added and having simmered 3 hours plus. Ready for consumption with broiled Italian bread brushed with olive oil and fresh garlic.

We all know you can post pics, Ole Man, because you've done it. I don't know if anyone really wants to see anymore of them, though. Oh, and thanks for the compliment. It took me forever to do that because someone kept interrupting me.

It was, Glass, along with some of the pasta water in the sauce. Water must be added while cooking, so I used some pasta water the last time I added some. Thanks, Cajun.

I didn't drench it in sauce when I tossed it. Just enough to keep it from sticking together. Worked out perfectly.

Gris - are you from N.O.? Red Gravy is sorta of yat thing, not that there's anything wrong with that (especially since I'm a yat from the lower 9).

I'm not, but I did live there for a while. Also have some friends whose parents made it on Sundays growing up. I still can't make it just like theirs and I mourn for that exact flavor.

My grandmother (native new Orleanian) used to make red gravy every Sunday. All I could suggest to your recipe is a little sugar and some anchovy paste.

that looks like our meat sauce over meatballs over pasta... we don't call it gravy, though.. what's the difference? btw, I'm from the U. P.
