My Adkins diet continues, but in my opinion, I am not suffering any at all. One really nice meal this weekend was hot dogs with my sweetie. I am an old guy and to me they are a special treat, especially the way we do them. Buns on an Adkins (low carb) diet? I don't think so.
So we made Bun-less Hot Dogs.
Start with the dog. We use Oscar Mayer
There will be chili (from a Hormel can because this is a childhood memory treat). It is in the microwave, while I do the slaw.
During the 38 months my father was in Europe with the 3rd Army in WWII, my mom and two of her sisters worked in Jackson, MS at Colonial Bakery. On paydays, she and her sisters would take the city bus from the bakery to a block north of the corner of Highway 80 and Terry Road, just north of Battlefield Park. Back then there was a restaurant called The Redwood Inn there and the use of this slaw on a Hot Dog came from them. As long as I can remember, this is the dressing used on a chili dog in our family.
Start with about a cup of shredded cabbage
and add a little over a tablespoon of yellow mustard. It is a hot dog after all!
The slaw is mixed and ready.
Next, we heated four Franks (two each) in the toaster oven and set up the table.
Then, we cut the franks into bite size pieces and covered them with chili and slaw.
This may not be for you, but to me it's just the thing for a kid at heart guy to enjoy for dinner.
