What items do you look for in a specialty meats shop? What is your go-to item and in which shop? Think I'm a stuffed shroom and pistolette guy.

Depends on which shop, but I usually consider: Boneless stuffed chickens Stuffed pork chops Stuffed peppers Boudin Meat pies Stuffed pork tenderloins Jerky Boudin balls Sausage Andouille Any smoked prepared meats if they offer those Dirty rice base (Hebert's in particular)

Jap and cheddar stuffed sausage. Not from a specialty shop, but Richard's is making one these days. I had some over the weekend. I had a quadruple bypass yesterday. CSB

Think I saw some at Calandro's on Perkins. Caught my eye but couldn't come up with the right excuse to buy some.

They suggested boiling it for ten minutes, (hahaha, I know) and serving it. I did the ten minutes, then tossed it in a skillet to crisp up the casing. It has a nice snap to it that way. Just be careful not to puncture them.

I like fresh ground veal, ground lamb and ground pork.. Fresh ground veal is a little harder to find and Whole Foods usually has a nice selection and availability.. Fresh Market often has the ground veal and if they don't have it in the case, they'll grind some for you. I also like grass fed beef and Whole Foods has a nice selection of grass fed cuts.

Never made a burger of just veal. I make meatloaf combining veal, pork and beef..
