He didn't even make a point. Dry aged beef is good dry aged other things are not good. Fresh cheese generally is better than processed cheese. Stale bread is not really good

The perception of quality???? What is quality nut an assignment of value based on personal experience and preference. Quality is subjective. Old is bad?? Dry aged beef has rotted for several weeks before being cooked and yet is in itself a sign of high quality beef.

All cheese is aged, either catalyzed by humans or naturally. Am. cheese is not cheese it is plastic IMO. Stale bread may not be good but it is good to use. All of this good, bad, quality and poor quality is based off of ones perception for the most part. I am not saying you are wrong I am just stating that your sight and perception play more of an important role than you are giving them credit for.

I know. But you used the term fresh cheese. you can have freshly made curds but cheese, going by centuries old techniques, is not fresh. It is old/aged to develop.
