Mine is chicken and dumplings.
Someone please post a recipe, preferably something your grandmother passed down.
I wanted some so bad last week ended up going to Cracker Barrel.
While not horrible I can do better.

My grandma made chicken and dumplings... She boiled a whole chicken with salt, pepper. Garlic powders, onion powders.... She then deboned the chicken... Used the stock for the dumplings... Put boneless chicken back in pot... Then she would buy the 4 pack of cheap biscuits... She stretched them broke into pieces and added to chicken and stock.... All a dumpling is, is an uncooked biscuit.... She took the easy way and just bought the dough ready made... I loved them..she has since passed away but I think of her every time I make this dish

Crawfish bisque. It seems too labor intensive, even though authentic crawfish bisque is supremely delicious.
Maque choux - made it once, it wasn't even close to Grandma's. Haven't tried since. (I mean the real stuff with fresh sweet corn, not frozen corn.)

Made about 20 miles from my house. Soooo good.
As far as what I love and never cook, gumbo and jambalaya. I have not made any in a long time. Learning how to cook these is why I joined TD in the first place.

What Darla said my mom and Aunt Make the best. Ive never cooked it. My favorite thing that I dont cook enough of is a Pepper Crusted with Sweet Heat Sauce.

Crawfish bisque mainly because getting a good stock is difficult. Boiled shells are too seasoned even if washed. Need to hold out plain shells for it. The labor doesn't bother me. Sometimes, I've made boulettes which are equally as good as stuffed shells but not as esthetically appealing to some people. They're easier to eat as well.

Embarrassed to say this but I just find frying chicken too much of a mess to fool with when there is a Popeye's close by.

My first attempt at chicken and dumplings was a month ago. This is my modified recipe from after cooking. Very, very easy. And very, very good.
Chicken and Dumplings -
1 - whole chicken
1 - 16 oz package frozen vegetable mix
2- yellow onions - rough chopped
2- stalks fresh celery - rough chopped
8 cups Chicken stock (from boiling chicken)
1/2 cup +/- shake and blend flour if needed to thicken
1 can of pet milk
1 can cream of mushroom
1 cup whole milk
2 cups bisquick
salt, pepper, tony's
Dumplings
2 Cups Bisquick
1 cup whole milk
Stir until soft dough forms. Reserve in bowl- put on top of chicken and veggies prior to closing the lid for the final 10 minutes of cooking.
Stew-
Parboil chicken with one large chopped onion and salt and pepper until cooked through, remove bones and save broth.
Shred cooled meat into pieces by hand.
Combine chicken, stock, vegetables in Dutch oven, add flour, stirring in slowly.
Add one can of cream of mushroom soup.
Heat to simmer for 30 minutes until hot through and through.
Add dumplings in soup spoon sized portions until top of stew is covered. Season with Tony's, slightly covering dumplings. Add one can pet milk.
Cook for an additional 30 minutes until dumplings are set and somewhat browned. Then stir well to break up dumplings.
Remove from fire and cool.

Chicken and dumplings is a good one.
I would love that recipe as well.
Good, smoked ribs or a nice brisket, mainly because they take so long to cook.

chicken and dumplings isn't hard to cook. I do a similar one to the recipe posted (no com soup though), but i use flour and water for my dumplings.
Dishes I love but never cook would be a lot of ethnic stuff like Thai, Indian or Vietnamese

I tried to cheat once and used the Grands brand (Flaky Layers). Bad idea

General Tso chicken. Don't know how.
For the things I do know how to cook, I don't remember the last time I've done a gumbo....
Making it almost seems like a waste of time for just my wife and I.
