| Cleaning some cast iron (Posted on 1/19/13 at 3:14 pm)
I have a small cast iron skillet that had a sticky surface in part of the bottom. I made a big fire in my barrel and got the pan warm, hung over the top of the barrel on a strip of rebar. Once the pan was hot enough not to crack, I put it down into the coals for about an hour. I watched as the gunk burned off. After about an hour, I hung it across the top again to start the cool down process. I will brush it down and reseason it tomorrow. IT should be smooth enough to make cornbread in it again, without the bread sticking.

all you need is a table spoon of lard for coating it, and you'll be good to go!

Working on it. You can't get stuff like the old cast iron anymore. I have a few pieces that were my grandmothers, and I am adding to the set as I find good pieces for sale here and there! One day, my son will be cooking with this set!

What's the difference between new cast iron and old cast iron?

The quality of the metal. A lot of the new stuff is no where near as well made.

i would say most of my cast iron stuff is close to a hundred years old, maybe older.. grandparents got most of it when they first got married.. it may not have been new then..

every piece i have is antique except my newest 12/qt dutch oven i bought from a guy off craigslist, who said his mom used it in her restaurant years ago. This Christmas my mom gave me a chicken fryer that my great grand parents bought over to the US from Poland that's weeeeellll over the century mark

All the new ones have a rough bottom. No matter how well it is seasoned, the inside bottom of the pots have a rough, cement like feel to them. The old ones are smooth as a baby's behind.

Yea it was the casting process that the old Griswolds used. Some of the ones that are very old and been used for a long time are also nearing in smoothness. I use electrolysis instead of a fire (too risky to warp or damage) I need to start getting rid of the ones that collected to sell. But each one starts to feel special and unique lol

Cleaned up nicely! The bottom is smooth as can be with no sticky spots anymore. I will be making some cornbread in it tonight!
