So ive been brining some duck breasts from yesterday and today in separate bags. After draining the bloody water from the yesterday breasts I noticed they smelled very sour, like spoiled milk. i just recovered them with brine and didnt worry about it. Drained again just now and they smell like a big bag of mashed up a-holes (more sour)
are they bad? they were cleaned 2 hours after last bird was shot, and I even put them on ice for the hour ride home because of the heat outside.
