I have a fridge dedicated to fermentation. So the carboy is in the fridge. By taping the probe to the side of the carboy, you are measuring the temp of the carboy......so when the temp of the carboy reaches the temp you set on the johnson controller ....in this case 73.....the fridge kicks on and cools the carboy down to 72.
