im not commercial.. i do about 10 quarts at a time, mainly around the first of November.. That gives it a little "maturing" time to be ready for use as Christmas gifts..

i dont know any scientific stuff about my shine.... Mine tastes better after a month.. In the apple pie shine, the extra time gives the cinnamon more chance to flavor... this year i tweaked my recipe a little bit and did a little apple pie shine with a hint of alamode to it... My customers said this years batch was the best, so i might tweak it a tiny bit more next year..
