Exactly. The lack of aciditic flavors is the one thing that truly holds back southern and creole/cajun foods. Sides with an acidic component are palate cleansers that make the rich main dish better.

The recipe he posted isn't the one I was taught when I worked at Dempsey's, but I didn't want to question him. I have always been told: oil, vinegar, parmesan, green onions, garlic, salt and pepper, sugar. (The first 5 was all we were taught to tell customers when they asked what's in it. I didn't find out about the sugar until much later)

Oh well, if it has sugar can't be much more than all the other options. Really can't taste the sweetness in it.
