Homebrewing: Malt Extracts

I noticed some recipes use so many pounds of LME plus some DME

Why would you use both?

Some places package their own 6 lb jug of LME then they need a little bit more extract to get it to the right gravity so they include some DME in 1 or 3 lb increments to get there.

I used Brewer's Friend and tinkered with the recipe to see the different results and it wasn't much of a change at all

another question regarding oak chips/cubes:
Do y'all re-use them or just throw them out after one use?

Hmm.. I have some oak chips in a kriek at the moment that I would consider reusing to keep a strain of wild yeast going if we brewed another sour beer.



I could see reusing them one more time possibly in stout or something like that.

Yes. Been in the fermenter since 4/20/12... Probably going to bottle soon.

Bought corks and cages the other day.


ETA: Fratastic is also holding half a batch of Consecration clone hostage... Brewed that one around summer time I think.

Yeah. I'll try to make that happen. Just have to get it bottled and hope that it carbonates and all correctly.

Absolutely the case with sour beers... but we can whip up a pale in two weeks no problem which is nice to bring to parties or whatever.

Yea, the only sour homebrew I've tried was a blueberry sour from Tetu, and I thought it was awesome. However, he said it was a complete accident and he couldn't recreate it. Damn.

Sounds like sour beers are an adventure.

I did the Jester King tour this weekend. They do a lot of barrel aged sours. Brewer said they have to dump it sometimes because it comes out awful.

I really need to try some more of their stuff. All I've had from them is a saison and wasn't too impressed. But the saison is one of my least favorite styles among the craft beer varieties.

I'm not on the JK bandwagon at this point but I'm also not a sour beer guy and I'm not gaga over the bourbon barrell aged stuff. Most of it doesn't appeal to me.

I have heard JK has experienced major quality control issues

I agree with you except for the barrel aged stuff, I like that. I'm not big on sours or funk, so they just don't appeal to me
