Clancy's Lemon-Icebox Pie
Ingredients 1 pint heavy whipping cream 1 (14-ounce) can condensed milk 1/2 cup fresh lemon juice 1 tablespoons lemon zest 1 teaspoon vanilla extract 1 prepared graham cracker crust Directions Whip the heavy cream with a handheld mixer in a bowl until stiff peaks. Combine the whipped cream, milk, lemon juice, lemon zest, and vanilla in a large bowl. Mix on medium speed until smooth. Pour into the pie crust. Refrigerate overnight.

They are actually my neighbors. She is in Wisconsin for a few months and told us to take them all. I know the food bank will throw them away. My wife made a lemon meringue pie this morning but may try the one just recommended.
The thing is these are HUGE lemons. I have a medium to above size hand and these things swallow my hand. Each one weighs north of 8-10 oz at a minimum. I have never seen lemons this big so I know they aren't Meyers.
Thanks for all the ideas. Thinking about a spicy lemon chutney.
