they can sense injury, infection, whatever...it concerns them and they want to try to fix you if possible.

dogs are generally stupid and will lick anything. i can go up to just about every dog on the planet and spit on the ground in front of them and they will lick it up

Just my opinion. But I'm not talking about showing the dog the cut and them licking it. I'm talking about the dog noticing the cut on its own and trying to lick it. I believe there have been studies on dogs that can smell / sense cancer as well. Will google. Lots of dogs can even pick up on the mood of their owner as well (in my opinion.) Maybe you just encounter really stupid dogs.

Dogs have heightened senses of smell which let them know if a cut has a bacterial infection in it or not, even though your immune system, or soap and water will defend against a serious infection, dogs will act on instinct, and In the wild, the pack usually tries to keep each other healthy, and an infection can lead to certain death. So its mainly to ensure that you are healthy.

Also, there is a website called Google that can help you with random queries.

Here is your answer:

Dogs have a chemical enzyme called EGF in their saliva.
This is better known as Epithelial Growth Factor.
EPG is a legitimate stimulator of rapid growth when a person gets a scrape or wound.

A dog knows that they are helping you to some degree. THe taste of blood is just lagniappe.
