This game does an extremely shitty job of telling players certain things.
It took me 6 hours of gameplay to find out I can jump.
ETA: Still have no clue about the benefits of humanity

all i knows is that i think i my world cant be invaded if in undead...so i stay undead.

I believe you also have to be human in order to summon the AI helpers.

I haven't played in a while, but I'm pretty sure you get much better drops when you're human.

You have to be human to get invaded/invade, you get a higher item drop percentage, and you can kindle
The more humanity you have in the grey corner, the higher your item drop is

Humanity does a few things. If you are using a Chaos weapon, the damage scales with your humanity up to 10. Humanity also increases drop rate. Some NPC's react to your character differently based on if you are hollow or human when you talk to them.

If you are human, you get 1 extra estus flask for every person that kindles the bonfire you last rested at. So if you rest a Firelink Shrine and 3 people kindle that bonfire after you rest there, you will have 13 estus flasks (assuming you've kindled). It's only a one time thing and you will only get 10 if you fall below and rest there again.
