When i make jerky, it comes out like most jerky I have ever tasted...dry and kinda hard
About a year ago I bought some jerky off of a food truck here in Orlando and it was very moist and tender. It was vacuum packed in small packages and seemed to have some type of oil/marinade that was inside the sealed bag.
I'm guessing that the jerky was cured like jerky normally is and then it was tossed in the oil/marinade and vacuum packed...thus resulting in a kind of rehydration of the jerky which made it moist and tender?
Has anyone ever had jerky like this? I've researched it because I'd love to know how to make it and can't seem to find anything more than a picture on eBay that looks a lot like what I had that day. In the picture you can see the oil/marinade in the bag. Wet jerky?
