If you've never made a gumbo, Paul Prudhommes recipe is pretty damn good and relatively easy.Making roux seems to be the intimidating step for first timers so I'm gonna duck when I say this, but to cut down on that step, just buy a jar of roux. As your gumbos get easier then you can work on making your own roux.
Carsons chicken looked pretty tasty, a nice dish for a football tailgate.
