I love throwing it on the grill for a bit, then Slicing it up to put in my spaghetti sauce recipe.

I would do pinto beans and rice. They cream better than red beans.

I like it grilled to crisp up the skin a little, then use in whatever. I thin slice it and put it in a bag in the fridge to snack on, or add to stuff. I have some going in an omlette tonight.

How about making Cajun eggs Benedict: English muffin, topped with grilled andouille slice, poached eggs and Hollandaise sauce. I had this at La Cote Brasserie for brunch in New Orleans and it was great.

I can't see throwing good Andouille on the grill. True Andouille already has a great heavy smoked flavor and would to me be to dry off the grill. Try Gumbo Jambalaya Bean Baked beans Cooked w Cabbage With a cream sauce over pasta Corn Maque Choux Corn and crab bisque Gris Gris Shrimp and Andouille Muffin Cakes which were great by the way. Makes a great baked Mac and Cheese Should I go on ?

Andouille has less fat than sausage, so I think it is healthier and prefer it. Feel the same way about Tasso.
