| big green egg question (Posted on 11/16/12 at 10:28 am)
Good people of the food board, I have a question about my already purchased BGE.*** I have been cooking on thing pretty steadily since I got it in May. The past few times I have cooked, though, I have had a hard time controlling flames inside the grill. I've done it with just a direct cooking setup, using the plate setter, and plate setter with pizza stone, so I don't think it's setup. I've been using the same charcoal for a few months now too, so I don't think it's charcoal. Honestly, I can't figure out what I am doing differently, I am getting a lot of flareups inside the grill, creating some uneven cooking and charring. Any thoughts? TIA ***This is highlighted because I don't need advice on which grill to buy, or why mine sucks, etc (Burt Reynolds).

we were having a similar issue with the one at the camp and it just needed a good cleaning. as in, remove all the old charcoal and get a brush to the thing. made a big difference. eta: it was not getting the correct air flow was our issue.

Thanks, haven't cleaned it out in a while, so I'll try this before cooking tonight.

best way to clean IMO is open everything wide open and let it burn for an hour. also. shopvac for the ash removal is key.

Agree on the cleaning. It will change everything about the air flow.

Be careful when doing this, I cooked my gaskets this way. Thankfully, BGE gave me a free set of high temp gaskets when I called about it.

you came out ahead on the deal... i suggest ripping the stock gaskets off and replacing with hi temp b4 you cook on the thing... that way they don't have time to set up.

I know, I did come out ahead. Back to the OP, make sure your gaskets aren't cooked, that could possibly be letting air in and causing the flare ups.

I'll check this out too -- I did notice some severe wear and tear on the gaskets. Any suggestions on good replacements?

I know there's a place here in laffy that sells the high temp ones. Like I said, I got mine for free when I called BGE asking them why my original ones fried.

I am in Dallas -- more a question of brand/type. High temp is the way to go?
