inject.......coat with seasoning......fry at 350 for 7.5 minutes per lb..........that is for just a turkey breast. The time is different for a whole turkey.

what ya need to know ? The bigger the pot the more oil you need... Don't fry turkeys over 12-14 lbs

My plan this year is just to fry a breast and a thigh. Cooking for just a couple of us and there will be plenty more food. First time frying a turkey so it will be interesting.

Fill pot to top with EVOO. Heat to point of smoking. Drop frozen bird in hot oil. Everything else takes care of itself.

Make sure the turkey is absolutely frozen solid when placing into the oil. This will assure a very crisp skin.

12-14 lb turkey. Brine the night before. Peanut oil. Fry for 3 minutes a pound plus 5 minutes. I don't inject, I actually like the tast of turkey. I have both the infrared electric fryer and a regular turkey fryer. I prefer turkey fried in peanut oil to the electric fryer, but definitely a lot easier clean up with the electric fryer

I have a friend that works in the burn unit. Frying turkeys brings in people every year.

Don't do it. The fried turkey is the biggest abomination in holiday related cooking, surpassing even the turducken. It is expensive (that much peanut oil aint cheap), inefficient, cooks unevenly, and more often that not disgusting.
