Rubbing vinegar on fresh chicken to remove impurities


I came across a couple of a couple of recipes that mention rubbing vinegar onto fresh chicken to eradicate impurities.

I've never heard of this, so instead of googling, I thought I'd come straight to the source and ask the experts here if you've done this and what advantages (or drawbacks) it has.

never heard of it with vinegar, i know that chicken plants use citric acid as a cleaner to kill bacteria bc the ph of the acid prevents the bacteria from growing. vinegar is very acidic so that line of thought makes sense to me.

I'd imagine any bacterial issues would migrate into the meat anyway. Rubbing the surface with vinegar seems like it would do very little.

Where I grew up, it was pretty standard to put chicken in a mix of 2 to 1 vinegar and oil before BBQ ing it. Makes for some really good chicken.

as the others say, I think it would do a pretty good job of killing bacteria that it contacts....but if you cook it correctly, the cooking process should do that...

I am sure it wouldn't hurt anything and may make it taste better...but I don't think there would really be an advantage to it...

I watched a guy take chicken that was just starting to turn and wash it down with vinegar. I wasn't eating it but he sure enjoyed it. I was amazed he didn't get sick.
