Episode 24: Lemon of Troy - the kids all travel to Shelbyville to steal back the lemon tree. It's the perfect Simpsons episode, solid gold from beginning to end. Too many great lines to list

The Treehouse of Horror when the class had to turn their frogs into princes and Bart ended up creating a mutant creature who begged for death and constantly vomited.

This is easy for me. Top 3 in no particular order:
Cape Feare -- The Thompsons, Sideshow Bob at the height of his brilliance + rakes!
Homer at the Bat -- Talkin sooooofball from Maine to San Diego talkin sooooooftball Mattingly and Canseco. Ken Griffey's grotesquely swollen jaw. Steve Sax and his run-ins with the law...
You Only Move Twice -- Homer working for a Bond villain, takes out Bond, and the Denver Broncos.

Homer drinks molten wax to coat his stomach against peppers at a chili contest.
Plan fails, he hallucinates, talks to Johnny Cash, finds meaning to his life and wakes up in a sand trap.
The animation is incredible.
ETA: this episode is entitled 'The Mysterious Voyage of Homer'
