That looks like a small fortune in proscuitto or serrano ham behind him, and possibly wheels of reggiano besides him.

Queso Manchego (possibly some Castilian, Zamorano, as well)

edit, Serrano, yeah you're probably right. The wall of cut and clear wrapped hams is surely predominantly Serrano, along with some bodega ham as well.

underneath, you've got some wine, possibly some pimientos del piquillo, some nice Cantabrian bonito tuna in a bottle and olive oil, and possibly some Cantabrian sardine fillets in same.

To his right on the counter, you've got chorizo, morcilla, morcón, lomo and salchichón.

I'd like my bomb shelter to be provisioned in this way.

A trained eye for food is a good thing to have. As to your bomb shelter stuffing it with a collection of European foods of the type on display would be nice way to be prepared. A true man cave with foods that at least give you the ability to go out is style. You would need a separate little groto for the vino and liqours necessary
