It's a show piece of a cookbook focusing on the cuisine of Southern Europe and North Africa. A great read and some very nice recipes if you have an interest in this style of cuisine.

hot damn! any scratch and sniffs? your thread about Mediterranean food was falling to the bottom of the Mediterranean without an anchor and I didnt want that to happen... There are some folks out there that have read a book and it would be a shame to miss this one...

Falafel 3/4 cup dried chickpeas 1 large onion, diced 2 garlic cloves, diced 4 T parsley 1 t cumin seeds, crushed 1 t coriander seeds,crushed 1/2 t baking powder Salt and fresh pepper Oil for frying Pita bread and a yogurt cucumber sauce Cover the chickpeas with water and soak overnight. Drain the cp's and cover with water in a boiler. Bring to a boil, cut to a simmer and go for an hour. Drain. Put cp's in a food processor with the onion, garlic, parsley.cumin, coriander,and baking powder. Salt and pepper to taste. Process to a paste. Shape to walnut sized balls, flatten slightly, and fry in 2 inches of oil until golden. Serve with the pita and yogurt sauce.
