Good for them. They buy their pork from Rebecca (won't say her last name) that ran the Ag extension farm on Ben Hur for a long time.

Cochon also use Unkel Farms. Kurt Unkel is a very down to earth guy that is on top of the organic, free range pork and produce scene in Louisiana.. You can check out Unkel Farms, Cajun Grain rice.. and his amazing Brown Jasmine Rice Grits at the New Orleans and Baton Rouge Farmers markets.

Good to see a few Bay Area places on there. I will likely be eating at Mission Chinese Food this weekend. So damn good.

Saw some tourists last week going batty snapping photos of Cochon staff bringing fresh hogs into the side of the building for butchering. Whether you like the place or not, nobody can accuse them of taking shortcuts. Aren't they now breeding their own Mangalitsas with another chef in Mississippi?

Devil, I have some of the grits and the brown rice. I haven't cooked it yet. Do you make the grits per the bag directions?
