Home made pimento cheese recipe?

I am looking for something different...

I normally use extra sharp cheddar, or pepper jack cheese, mayo, cayenne pepper, and sometimes chopped pecans.

2 cups sharp orange cheddar, grated (8 oz.)
½ cup Duke’s mayonnaise- Important
½ cup pimiento peppers, drained and chopped (7-oz. jar)
¼ cup green onion, chopped (use both the green and the white parts)
1 tsp. black pepper
½ tsp. salt
¼ tsp. cayenne
Dash of Tabasco

Try using smoked gouda. Friend brought some in from Whole Foods and it was incredible.

I like jalapeno in mine. I just saw some recipes for this but I can't recall where. I'll think on it.

ETA: I think the Company Burger recipe is the one I just saw.

Nice on bread, wheat thins, corn chips, etc
